We are proud to announce that the Sky Pool, a new venue for sun bathing, swimming and delightful pool-side dining is open at Pueblo Bonito Sunset Beach Resort and Spa.

The sky pool is located high in the sky, on top of the hill above the lobby, with an awe-inspiring view of the Pacific Ocean that is unmatched in all of Los Cabos. You will also be able to enjoy a soothing soak in the Jacuzzi. Towel, bar and food service are available and children are welcome.

Wine Festival 2008

Announcing the 2008 Cabo San Lucas International Wine FestivalWhat better way to welcome the beginning of a new year than a celebration of wine and food? Pueblo Bonito Oceanfront Resorts and Spas and Wine Country International Magazine will be hosting a four-day extravaganza of wine & cuisine January 16 through January 19, 2008, offering three days of educational wine seminars, celebrity chef cooking demonstrations, and samplings of international wines and cuisine.

Recipe of the Month

Recipe of the month: Grilled asparagus with Gorgonzola butter 6 servings

Serves 4

Veal

¾ cup loosely packed crumbled Gorgonzola cheese
6 Tbs (3/4 stick) butter, room temperature
1 tsp fresh lemon juice
2 Tbs olive oil
1 Tbs chopped fresh basil
3 garlic cloves, minced
2 pounds asparagus, trimmed

Stir Gorgonzola cheese, butter and lemon juice in medium bowl to blend. Season to taste with salt and pepper. Cover and refrigerate. (Gorgonzola butter can be prepared 2 days ahead. Keep refrigerated).

Prepare barbecue (high heat). Whisk oil, basil and garlic to blend in small bowl. Spread asparagus in single layer in baking dish. Pour oil mixture over asparagus and turn to coat. Sprinkle with salt and pepper. Transfer asparagus to barbecue. Grill until charred on all sides, turning occasionally, about 4 minutes. Transfer to plates. Top asparagus with some Gorgonzola butter and serve.
