Spotlight: Cilantro’s at Pueblo Bonito Mazatlán

Originally opened thirty years ago as our much-celebrated flagship property, the new and improved Pueblo Bonito Mazatlán officially reopened in April 2021 after completing the final phase of a $26.5 million renovation. The complete transformation pays homage to the resort’s signature old-world charm while elevating all elements of the property with contemporary redesigns and brand-new additions including a restaurant, bar, and meeting space. This month, we’ll tell you what’s cooking at Cilantro’s, Mazatlán’s latest favorite place to dine. 

Located along the famous Zona Dorada, or Golden Zone of Mazatlán, Pueblo Bonito Mazatlán offers a spectacular, full-service beach resort experience. And one of our most popular destinations on the property is Cilantro’s. With gorgeous beachfront views and modern Mazatlán style, Pueblo Bonito’s fully renovated restaurant is the ideal place for those who enjoy good food, good drinks, and good times. From opening day, the restaurant’s chef and talented kitchen staff have remained dedicated to serving the best of what’s fresh and have worked diligently to source menu ingredients from local farms, fishermen, and vendors. One of the restaurant’s staples is shrimp. But can you guess why? Mazatlán is the shrimp capital of the world! Distributing more than 40,000 tons of shrimp across the globe every year, the tasty crustacean is Mazatlán’s most famous export, so you’ll see it featured prominently on Cilantro’s menu, too. Straight from the boat and into our kitchens, the shrimp we prepare will arrive at your table, breaded, sauteed, in a scampi or fritter, over fish, grilled, or with a delicious side. But shrimp isn’t our only specialty; any number of fabulous soups, salads, and sandwiches prepared with a Mexican-inspired flair fill the menu every night. And whatever your order, be sure to save room for dessert; try the Pueblo Bonito flan flavored with Grand Marnier, or the decadent Mazatlán-style banana cream pie. Dinner is served from 5 pm to 10 pm.

But Cilantro’s eclectic mix of seafood and international cuisine, as well as its full bar and extensive wine list, delight guests well beyond dinner hours. The welcoming dining room also serves indulgent Sunday brunches with a mind to elevate its menu every week. As with the dinner menu, Cilantro’s expert kitchen staff scours the region for traditional recipes unique to Baja California to create seasonal brunch menus with as many local and organic ingredients as possible so you can savor every tantalizing bite no matter the hour. But why not start your day early at Cilantro’s with an ocean view and a fresh fruit juice or aromatic coffee. Tuck into a short stack of buttermilk pancakes or thick and delightfully crispy Belgian waffles. Order eggs any way or try one of our chef’s specialties like Mutuleños eggs poached in a rich tomato sauce with fried plantains or Ranchero style eggs fried on a crispy corn tortilla and dipped in hot sauce. There are Enchiladas Potosinas stuffed with fresh cheese and smothered in a mouthwatering guajillo sauce. Chilaquilas feature tender chicken with a green sauce and cream, while a trio of gorditas are stuffed with chilorio and pork rinds in green sauce and accompanied by a side of potato with chorizo, beans and molcajete sauce.
